Why shouldn’t I just sell all my company stock as soon as I’m able?

Research shows that you should sell your concentrated stock position as soon as you’re comfortable. Most employees don’t want to sell their company stock immediately. The best thing you can then do is sell as gradually as possible over your preferred time horizon: that is exactly what Selling Plan allows you to do.
